What would a good breeder ask me, and what would I ask them?

They don't ask you anything. I have shopped around and bought from reputable breeders. I'm talking champion bloodline, AKC, pups. None of them asked a thing about me. But I would suggest to ask them many questions, even if they are dinky questions or repeating questions. The more you get a person talking the more you can pick up inconsistencies. Also, there are things you may not have even thought to ask that could come up in conversation. Just keep them talking.
